This Chopped Italian Sandwich is a vibrant, flavor-packed twist on the classic Italian sub. It features roasted red peppers, mozzarella, olives, artichokes, and a tangy Italian dressing, all chopped together and piled high on a soft sub roll. A quick and easy meal that’s perfect for lunch or dinner!

Ingredients

  • 4 hot dog buns or sub rolls

  • 2 cups shredded romaine lettuce

  • 2 medium tomatoes, sliced

  • 6 slices mozzarella cheese

  • ½ cup roasted red peppers, drained

  • 1 small red onion, sliced

  • ¼ cup sliced olives

  • ½ cup marinated artichoke halves, drained

  • ¼ cup mayonnaise (or substitute sour cream/plain yogurt)

  • 1 tbsp extra virgin olive oil

  • 3 tbsp vinegar (red wine vinegar recommended)

  • 1 tbsp dried Italian seasoning

  • Kosher salt and pepper, to taste

Instructions

. Chop the Ingredients:

  • Spread shredded romaine on a large cutting board.

  • Layer tomato slices, mozzarella, roasted peppers, red onion, olives, and artichokes on top.

  • Using a sharp chef’s knife, chop everything together until well combined.

2. Season & Toss:

  • Drizzle with mayonnaise, olive oil, and vinegar.

  • Sprinkle Italian seasoning, salt, and pepper over the mixture.

  • Toss everything together until fully coated.

3. Assemble the Sandwiches:

 

  • Scoop the chopped filling into the buns or sub rolls.

  • Serve immediately and enjoy!

Notes

  • For extra protein, add sliced salami, turkey, or ham to the mixture.

  • Try using ciabatta rolls, hoagie buns, or sourdough bread for a sturdier sandwich.

  • Adjust the vinegar and olive oil to your taste preference for a more tangy or rich flavor.
