- 4 cups chicken broth

- 1 bay leaf

Instructions
- Heat a large pot or Dutch oven over medium heat.
- Add olive oil, then sauté the onion, carrots, and celery until softened and fragrant.
- Stir in the garlic and tomato paste, cooking for about one minute.
- Add the sliced sausage, white beans, chicken broth, thyme, bay leaf, salt, and black pepper.
- Bring to a gentle simmer, cover, and cook for 30 minutes, stirring occasionally.
- Remove the bay leaf, taste, and adjust seasoning if needed.
- Serve warm and enjoy.
