4 large tortillas or wraps (spinach, plain, or whole wheat)
1 large cucumber, thinly sliced
1 cup crumbled feta cheese
1/2 cup hummus (any flavor)
1/4 cup Greek yogurt (optional for creaminess)
1/4 red onion, very thinly sliced
1/2 cup shredded carrots
1/2 cup baby spinach or arugula
2 tablespoons fresh dill or mint, chopped
Salt and pepper, to taste
Olive oil, for brushing
Optional: Red pepper flakes, for a little spice
Instructions
Warm the tortillas slightly (microwave for 10–15 seconds) to make them easier to roll. Spread a generous layer of hummus over each tortilla. If using, spread a spoonful of Greek yogurt on top of the hummus for extra creaminess.
Evenly distribute cucumber slices over the hummus layer. Top with crumbled feta cheese, sliced red onion, shredded carrots, spinach or arugula, and fresh herbs. Season lightly with salt, pepper, and optional red pepper flakes.
Carefully roll up each tortilla tightly like a burrito, tucking in the sides as you go.
Heat a large skillet over medium heat. Lightly brush each wrap with olive oil. Place wraps seam-side down in the skillet and cook for 2–3 minutes per side, pressing gently, until golden and crispy.
Slice in half and serve warm!
