Instructions

  • Prep and Preheat:
    • Preheat your oven to 350°F (175°C).
    • Line baking sheets with parchment paper or a silicone baking mat.
  • Make the Cookie Dough:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour and cocoa powder. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
  • Roll and Cut the Cookies:
    • On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
    • Use a heart-shaped cookie cutter to cut out shapes from the dough.
    • Place the cookies onto the prepared baking sheets.
    • Optional: Use a fork to gently prick the tops of the cookies for a decorative touch.
  • Bake the Cookies:
    • Bake in the preheated oven for 8-10 minutes, or until the edges are set.
    • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  • Prepare the Ice Cream Filling:
    • While the cookies cool, spread the softened ice cream evenly onto a baking sheet lined with parchment paper, about 1-inch thick.
    • Freeze the ice cream for 1-2 hours, or until firm.
    • Using the same heart-shaped cookie cutter, cut out heart-shaped portions of the ice cream.
  • Assemble the Treats:
    • Take one heart-shaped cookie and place a heart-shaped piece of ice cream on top.
    • Gently sandwich with a second cookie, pressing lightly.
    • Repeat with the remaining cookies and ice cream.
  • Freeze and Serve:
    • Place the assembled ice cream sandwiches back in the freezer for at least 30 minutes to firm up.
