Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened dark cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar (for dough)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  • Preheat the Oven:
    • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the Dry Ingredients:
    • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • Cream Butter and Sugar:
    • In a large bowl, cream the butter and 3/4 cup of granulated sugar together until light and fluffy. You can use a hand mixer or stand mixer on medium speed.
  • Add the Wet Ingredients:
    • Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  • Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together. The dough will be soft but should hold its shape.
  • Form the Dough Balls:
    • Roll the dough into 1-inch balls. Roll each ball in the extra 1/4 cup of granulated sugar to coat evenly.
  • Bake the Cookies:
    • Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
    • Bake for 10-12 minutes, or until the edges are set and the tops look slightly cracked. The cookies will firm up as they cool.
  • Cool the Cookies:
    • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  • Enjoy:
    • Enjoy your rich, chocolatey sugar cookies! These are perfect for any chocolate lover.

Notes

  • For an extra touch, you can sprinkle some sea salt on top of the cookies before baking for a salty-sweet contrast.
