- 3–4 Medjool dates, pitted
- 1 cup frozen mango chunks
- 1/2 cup frozen pineapple chunks
- 1 ripe banana
- 1 cup coconut milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon shredded coconut (optional, for topping)
Instructions
- In a blender, combine the pitted dates, banana, and coconut milk. Blend until smooth and dates are fully broken down.
- Add in frozen mango, pineapple, and vanilla extract.
- Blend again until creamy and thick, scraping down the sides if needed.
- Pour into a chilled glass.
- Top with shredded coconut if desired and enjoy immediately.
Notes
- Soak dates in warm water for 10 minutes if they’re firm or dry.
- Use frozen fruit to achieve a thick, icy texture without watering it down.
- Add protein powder or nut butter for extra nutrition.
