  • 34 Medjool dates, pitted
  • 1 cup frozen mango chunks
  • 1/2 cup frozen pineapple chunks
  • 1 ripe banana
  • 1 cup coconut milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon shredded coconut (optional, for topping)

Instructions

  1. In a blender, combine the pitted dates, banana, and coconut milk. Blend until smooth and dates are fully broken down.
  2. Add in frozen mango, pineapple, and vanilla extract.
  3. Blend again until creamy and thick, scraping down the sides if needed.
  4. Pour into a chilled glass.
  5. Top with shredded coconut if desired and enjoy immediately.
