This Dill Pickle Focaccia Bread combines the savory, herby flavors of garlic, Italian seasoning, and cheese with the tang of dill pickles. A delicious and unique twist on traditional focaccia, perfect as an appetizer or side dish!

For the Crust:

  • 1 cup warm water (105°F to 115°F)
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • ⅓ cup extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 2 ½ cups all-purpose flour

For the Sauce:

  • ¾ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons whole milk
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic, minced
  • ½ teaspoon dill weed
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

For the Toppings:

  • 2530 dill pickle slices
  • 2 cups shredded mozzarella cheese
  • Fresh dill, roughly chopped for garnish

Instructions

  • Make the Dough: In a large bowl, combine water, yeast, and sugar. Stir and let it rest for 5 minutes. In a small bowl, mix oil, Italian seasoning, garlic, and salt. Pour half of the oil mixture into the yeast mixture. Add flour and stir to combine. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  • Prepare the Garlic Sauce: In a medium bowl, combine all sauce ingredients. Stir until well mixed.
  • Preheat Oven and Prepare Skillet: Preheat the oven to 450°F (230°C). Pour the remaining oil mixture into a 12-inch cast-iron skillet. Use a pastry brush to coat the skillet.
  • Assemble the Focaccia: Add the dough to the skillet, pressing to the edges. Use your fingers to make dimples in the dough. Spread the garlic sauce over the dough. Arrange dill pickle slices on top and sprinkle with mozzarella cheese.
  • Bake: Bake for 22-25 minutes, or until the crust is golden and cheese is bubbly and browned.
  • Serve: Garnish with fresh dill before serving.
