Ingredients

  • 1 party-sized bag Doritos
  • 2 cups shredded Mexican blend cheese
  • 1 lb ground beef
  • 1 can cream of chicken soup
  • 1 can Rotel tomatoes
  • 8 oz sour cream
  • 1 package taco seasoning
  • 1 (13.5 oz) can black beans, rinsed and drained

Instructions

  • Preheat oven to 350°F. Spray a casserole dish with nonstick cooking spray.
  • Brown ground beef in a skillet until no pink remains. Drain excess fat.
  • Stir in taco seasoning and simmer until the mixture thickens.
  • In a bowl, mix together the cream of chicken soup, Rotel tomatoes, sour cream, black beans, and half of the shredded cheese.
  • Layer crushed Doritos on the bottom of the casserole dish.
  • Spread half of the beef mixture over the Doritos layer.
  • Add another layer of crushed Doritos on top, followed by the remaining beef mixture.
  • Add the final layer of crushed Doritos and top with the remaining shredded cheese.
  • Cover with foil and bake for 35 minutes.
  • Let it cool slightly before serving and enjoy!

Notes

  • If you want extra heat, you can add a can of diced green chilies or jalapeños to the beef mixture.
  • You can substitute the sour cream for Greek yogurt if you prefer a lighter version.
  • For a vegetarian version, omit the ground beef and add extra beans and vegetables.
