This cheesy, crunchy, and flavorful casserole is a crowd-pleaser, packed with creamy chicken, melty cheese, and crispy Doritos! Perfect for a quick and satisfying dinner or a fun dish for potlucks.

  • 3 cups cooked, shredded chicken (rotisserie works great!)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese (divided)
  • 1 bag (9.75 oz) Nacho Cheese Doritos, crushed
  • 1/2 cup milk
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  • Preheat Oven:
    Set oven to 375°F (190°C) and grease a 9×13 baking dish.
  • Make the Creamy Chicken Mixture:
    In a large bowl, mix cream of chicken soup, sour cream, drained Rotel, milk, garlic powder, onion powder, and taco seasoning.
    Stir in shredded chicken and 1 cup of shredded cheddar cheese.
  • Assemble the Casserole:
    Layer half of the crushed Doritos on the bottom of the greased dish.
    Spread the creamy chicken mixture evenly over the chips.
    Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  • Bake:
    Cover with foil and bake for 25 minutes.
    Remove foil, sprinkle the remaining Doritos over the top, and bake uncovered for another 5-10 minutes until crispy and bubbly.
  • Serve & Enjoy:
    Let it cool for 5 minutes before serving.
    Garnish with chopped green onions or a dollop of sour cream if desired.

Notes

  • For a lighter version, swap sour cream for Greek yogurt.
  • You can use any flavor of Doritos, but Nacho Cheese works best for this recipe.
  • If you want extra crunch, you can add more crushed Doritos on top before baking.
