These refreshing Dreamsicle Cupcakes combine the sweet flavor of orange with creamy cream cheese frosting, toasted coconut, and a juicy mandarin orange segment on top. Perfect for a bright and citrusy treat, these cupcakes are a delightful dessert for any occasion.

  • 12 paper cupcake liners
  • 1 package Orange Dreamsicle™ Bar Mix
  • 1 (8-ounce) package cream cheese, softened, divided
  • ½ cup 2% milk
  • 1 (12-ounce) container whipped cream cheese frosting
  • ½ cup sweetened coconut flakes, toasted
  • 12 mandarin orange segments in light syrup, well drained and patted dry

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Line a 12-count muffin pan with paper cupcake liners.
  2. Prepare the Batter: Follow the package directions for the Orange Dreamsicle Bar Mix, using half of the cream cheese and the milk. Divide the batter evenly among the cupcake liners.
  3. Bake: Bake for 21-23 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely in the pan.
  4. Frost and Garnish: Transfer the whipped cream cheese frosting to a resealable bag. Cut the tip off one corner and pipe the frosting onto the tops of the cooled cupcakes. Garnish each cupcake with toasted coconut flakes and a mandarin orange segment.
  5. Serve: Enjoy immediately, or refrigerate until ready to serve.
