Ingredients

Scale
  • 1 lb cod fillet (fresh or thawed from frozen)
  • ⅓ cup olive oil
  • ½ lemon, juiced + zest
  • 1 tbsp garlic paste (or 2 cloves minced garlic)
  • 1 tbsp chopped fresh parsley
  • 1 tsp all-purpose seasoning (like Lawry’s or Goya)
  • 1 tsp smoked paprika
  • Kosher salt, to taste
  • Seafood seasoning (optional)

  • Lemon slices (for baking)

Instructions

  • Prep the Oven & Baking Dish:
Preheat your oven to 400°F and position the rack in the top third. Line a baking dish with lemon slices to infuse flavor and prevent sticking.

  • Make the Marinade:
In a small bowl, whisk together olive oil, lemon juice & zest, garlic, parsley, all-purpose seasoning, smoked paprika, and salt.

  • Bake the Cod:
Place the cod fillet on top of the lemon slices in the baking dish. Pour the marinade over the fish, using a brush or spoon to coat evenly. Bake at 400°F for 20 minutes, or until the fish flakes easily with a fork.

  • Optional Broil for a Golden Finish:
For a slightly crispy, golden top, broil the cod for the last 2 minutes.

Notes

  • You can substitute cod with other white fish such as haddock or tilapia.
  • Serve this dish with steamed vegetables or a light salad for a complete healthy meal.

  • Adjust seasoning to taste, and add more lemon juice for extra tang.
