  • ½ cup imitation crab, shredded (or real crab)
  • 1 avocado, diced
  • ½ cup cooked sushi rice (optional, for a heartier salad)
  • 1 tbsp sesame seeds (white or black)
  • 1 tbsp green onions, chopped
  • ½ sheet nori (seaweed), cut into thin strips (optional)

For the Dressing:

  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp mayonnaise (or Greek yogurt for a lighter option)
  • 1 tsp sesame oil
  • ½ tsp sugar
  • ½ tsp sriracha (optional, for spice)

Instructions

  • Prep the Ingredients
    Slice cucumbers thinly and place them in a bowl. Add imitation crab, avocado, and cooked sushi rice (if using).
  • Make the Dressing
    In a small bowl, whisk together rice vinegar, soy sauce, mayo, sesame oil, sugar, and sriracha.
  • Toss & Garnish
