½ cup (1 stick) unsalted butter, melted
1 tablespoon white wine vinegar (see note)
1 teaspoon vanilla extract
Pinch of salt
1 (9-inch) pie crust (store-bought or homemade)
Preheat oven to 350°F (175°C).
Make the Filling:
– In a medium bowl, combine the beaten eggs, sugar, coconut flakes, melted butter, white wine vinegar, vanilla, and salt. Mix well until fully combined.
Assemble the Pie:
