Easy Garlic Rosemary Focaccia Muffins

These mini focaccia muffins are crispy on the outside, soft and herby on the inside, and bursting with the fragrant flavors of garlic and rosemary. Using store-bought pizza dough makes them quick and easy to prepare, perfect as a side dish, appetizer, or snack.

  • 1.5 pounds store-bought pizza dough
  • ½ scant cup extra virgin olive oil
  • 8 cloves garlic, chopped
  • 4 sprigs fresh rosemary, leaves removed and chopped
  • Flaky salt

Equipment:

  • Muffin pan
  • Bench scraper or sharp knife

Instructions

  • Prepare the Dough:
    If time allows, place the pizza dough in a lightly greased bowl and let it come to room temperature.
    Using a bench scraper or sharp knife, divide the dough into 12 even pieces. Avoid overworking the dough to preserve air bubbles.
  • Prepare the Muffin Pan:
    Pour 1 teaspoon of olive oil into each cup of a standard muffin pan.
    Gently shape each dough piece into a rough ball and place it into the oiled muffin cups.
  • Rest the Dough:
    Cover the muffin pan with a clean towel and let the dough rest near the oven while preheating. This helps the dough rise slightly.
    Preheat the oven to 400°F (200°C).
  • Prepare the Garlic Rosemary Oil:
    Heat the remaining olive oil in a small pan over medium heat.
    Test the oil’s readiness by flicking a small drop of water into it; if it sizzles, it’s ready.
    Remove the pan from the heat and carefully stir in the chopped garlic and rosemary. Let it sit until the sizzling stops.
  • Assemble the Muffins:
    Spoon a generous amount of the garlic rosemary oil over each dough ball, ensuring even coverage.
    Using two fingers, press into the dough to create dimples. This helps the garlic and rosemary adhere and gives the focaccia its signature texture.
    Sprinkle flaky salt over the top of each muffin.
  • Bake:
    Bake in the preheated oven for 14–16 minutes, or until the muffins are golden brown and crispy on top.
    Tip: If the tops are browning too quickly, loosely cover the muffins with foil for the remainder of the baking time.
  • Serve:
    Remove the muffins from the oven and let them cool slightly before serving.
    Serve warm as a side dish, snack, or appetizer.

Notes

  • You can also use dried rosemary if fresh is unavailable.
  • For a more intense garlic flavor, feel free to add more garlic to the oil mixture.
