This Egg Quesadilla is the perfect combination of fluffy scrambled eggs, melted cheese, and a crispy tortilla. Ready in just 10 minutes, it’s a delicious breakfast or snack option that’s easy to customize with your favorite fillings.

Ingredients

  • 1 large tortilla (flour or whole wheat)
  • 2 eggs
  • 2 tbsp milk (optional, for fluffier eggs)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tbsp butter or oil
  • Salt and pepper, to taste
  • Optional fillings: diced bell peppers, spinach, mushrooms, ham, or salsa

Instructions

  • Prepare the Eggs:
    In a bowl, whisk eggs with milk, salt, and pepper.
  • Cook the Scrambled Eggs:
    Heat butter or oil in a pan over medium heat. Pour in the eggs and scramble until just set, then remove from heat.
  • Assemble the Quesadilla:
    Place the tortilla in the pan, sprinkle half of the cheese on one side. Add the scrambled eggs on top and sprinkle with the remaining cheese.
  • Cook the Quesadilla:
    Fold the tortilla in half and cook for 1-2 minutes per side, until golden brown and crispy.
