Eggs Avo Toast

Ingredients

  • 2 slices thick-cut bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 teaspoon lemon juice
  • Salt to taste
  • Cracked black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Bring a pot of water to a boil. Gently add eggs and boil for 7 minutes. Transfer to an ice bath, then peel and slice.
  2. Toast the bread until golden brown and crisp.
  3. Cut the avocado, remove the pit, and mash the flesh with lemon juice and a pinch of salt.
  4. Spread the mashed avocado evenly over the toasted bread slices.
  5. Top with sliced soft-boiled eggs.
  6. Season with cracked black pepper and red pepper flakes if desired.
  7. Serve immediately while the toast is warm and crispy.

Notes

  • Use room temperature eggs for easier peeling.
