- 2 slices thick-cut bread
- 1 ripe avocado
- 2 large eggs
- 1 teaspoon lemon juice
- Salt to taste
- Cracked black pepper to taste
- Red pepper flakes (optional)
Instructions
- Bring a pot of water to a boil. Gently add eggs and boil for 7 minutes. Transfer to an ice bath, then peel and slice.
- Toast the bread until golden brown and crisp.
- Cut the avocado, remove the pit, and mash the flesh with lemon juice and a pinch of salt.
- Spread the mashed avocado evenly over the toasted bread slices.
- Top with sliced soft-boiled eggs.
- Season with cracked black pepper and red pepper flakes if desired.
- Serve immediately while the toast is warm and crispy.
Notes
- Use room temperature eggs for easier peeling.
- Mash avocado just before serving to keep it fresh and green.
- For extra protein, add an additional egg or sprinkle seeds on top.
