  • 1/2 cup cottage cheese, blended until smooth (this is key for the perfect texture!)
  • 1/4 teaspoon cream of tartar (this helps stabilize the egg whites)
  • 1/2 teaspoon salt (for flavor)
  • 1 tablespoon cornstarch or arrowroot powder (optional, but it adds a little structure)
  • 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)

Instructions

  • Preheat the Oven:
    Start by preheating your oven to 300°F (150°C). Line a baking sheet with parchment paper and set it aside.
  • Separate the Eggs:
    Carefully separate the egg whites and yolks into two different bowls. Make sure no yolk gets into the whites, or they won’t whip up properly.
  • Whip the Egg Whites:
    Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This is what gives the bread its airy texture, so don’t skip this step!
  • Mix the Yolks and Cottage Cheese:
    In the bowl with the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix everything together until smooth.
  • Fold in the Egg Whites:
    Gently fold the whipped egg whites into the yolk and cottage cheese mixture. Do this in thirds to keep the mixture light and fluffy. Use a spatula and be careful not to overmix—you want to keep as much air in the mixture as possible.
  • Shape and Bake:
    Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds or larger pieces. Use a spoon to shape them evenly. Bake for 25-30 minutes, or until the bread is golden brown and set.
  • Cool and Enjoy:
    Let the cloud bread cool completely on the baking sheet before serving. This helps it hold its shape and texture.
