- 1.5 pounds sirloin steak, cut into bite-sized pieces
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 6 tablespoons unsalted butter, divided
- 5 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1/2 cup whole milk, warmed
- 1 tablespoon olive oil
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, freshly cracked
Instructions
- Bring a large pot of salted water to a boil. Add potatoes and cook for about 15 minutes until fork-tender. Drain, return to the pot, and mash with 4 tablespoons butter and warmed milk. Season with salt and pepper.
- Heat a large skillet over medium-high heat and add olive oil.
- Season steak bites with salt and pepper. Add them to the skillet in a single layer and sear for 2–3 minutes per side until browned and just cooked through.
- Reduce heat, add remaining 2 tablespoons butter and minced garlic. Stir to coat steak bites with garlic butter for 1–2 minutes.
- Sprinkle with fresh parsley. Optional: Crisp up mashed potatoes in a pan for extra texture.
- Serve steak bites alongside mashed potatoes and drizzle with remaining garlic butter.
