This Fresh Strawberry Cream Cheese Bread is a deliciously moist loaf that combines the tanginess of cream cheese with the sweetness of fresh strawberries. Perfect for breakfast or as a dessert, this easy-to-make bread is sure to be a family favorite.

  • Bread Base:
    • 4 ounces cream cheese, room temperature
    • 1 cup granulated sugar
    • 2 large eggs, beaten
    • ½ cup buttermilk
    • ⅓ cup plus 1 tablespoon plus 1 teaspoon vegetable oil
    • 1 teaspoon pure vanilla extract
  • Dry Ingredients:
    • 2 cups all-purpose flour, sifted then measured
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • ¼ teaspoon cinnamon
    • 3 tablespoons dry strawberry Jello
  • Strawberry Mixture:
    • 2 cups fresh strawberries, chopped and mashed with 2 tablespoons sugar and 1 tablespoon flour
    • 1 tablespoon strawberry juice (reserved from mashed berries)
  • Cream Cheese Glaze:
    • 4 ounces cream cheese, softened
    • 2 cups confectioners’ sugar
    • ¼ teaspoon vanilla extract
    • 3 tablespoons heavy cream or whole milk

Instructions

  • Preheat oven to 350°F. Grease and flour a 9×5 inch loaf pan.
  • Beat cream cheese until smooth, then add sugar and mix until fluffy.
  • Mix in beaten eggs, then whisk in buttermilk, vegetable oil, and vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, salt, cinnamon, and dry strawberry Jello.
  • Gently fold the dry ingredients into the wet mixture.
  • Fold in the prepared strawberries, reserving some for the top, and add strawberry juice.
  • Reduce the oven temperature to 325°F and bake for 50-55 minutes, or until a toothpick comes out clean.
  • Allow to cool completely in the pan.
  • For the glaze, beat cream cheese until smooth, then add confectioners’ sugar, vanilla, and heavy cream. Mix until creamy.
  • Drizzle glaze over the cooled bread.

Notes

  • Make sure the cream cheese is softened to room temperature for the best texture.
  • If you want a more pronounced strawberry flavor, you can add more strawberry Jello mix to the dry ingredients.
  • This bread can be stored at room temperature for up to 3 days or in the refrigerator for up to 1 week.
