For the Crust:

  • 1 1/4 cups graham cracker crumbs
  • 1/2 cup coarsely chopped pretzels
  • 1/2 cup chopped pecans
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 2 pounds fresh strawberries, divided
  • 3/4 cup granulated sugar
  • 1/3 cup boiling water
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For Topping (Optional):

  • Homemade whipped cream
  • Fresh mint leaves (for garnish)

Instructions

  1. Prepare the Crust:
    In a medium bowl, combine the graham cracker crumbs, chopped pretzels, chopped pecans, granulated sugar, and melted butter.
    Press the mixture into the bottom and partway up the sides of a springform pan or pie plate. Use the bottom of a measuring cup to help pack the crust in tightly.
    Chill the crust in the refrigerator while preparing the filling.
  2. Make the Strawberry Filling:
    Puree 1 1/2 cups of the fresh strawberries in a blender or food processor.
    Add the boiling water, cornstarch, and sugar to the puree, and blend until smooth.
    Transfer the mixture to a saucepan over medium heat. Stir constantly and bring the mixture to a boil. Let it boil for 3 minutes until thickened.
    Remove from heat and stir in the vanilla extract. Let the mixture cool slightly.
  3. Assemble the Pie:
    Halve or quarter the remaining fresh strawberries (depending on size) and stir them into the glaze mixture.
    Pour the strawberry mixture into the chilled crust, spreading it out evenly.
    Place the pie in the fridge to chill for at least 2 hours to set.
  4. Serve:
    Once the pie has set, remove the outer ring of the springform pan (if using).
    Garnish with a dollop of whipped cream and fresh mint leaves, if desired.
    Slice and serve chilled.

  • For an extra sweet-salty combination, don’t skip the pretzel-pecan crust!
