For the Chicken Bites:
1½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
Prepare the Sauce: In a small bowl, mix together the sour cream, mayonnaise, lemon juice, parsley, dill, and chives. Season with salt and pepper to taste. Refrigerate until ready to use.
Season the Chicken: In a large bowl, toss the chicken pieces with Italian seasoning, paprika, salt, pepper, and Parmesan cheese until evenly coated.
Cook the Chicken Bites: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and sear until golden and cooked through (about 5–7 minutes), stirring occasionally. Push the chicken to one side of the skillet. Add the butter and garlic to the empty side; stir and cook for about 30 seconds until fragrant, then toss everything together.
Garnish and Serve: Remove from heat. Sprinkle with fresh parsley. Serve hot with the creamy herb sauce on the side for dipping or drizzling!
Notes
For extra crispiness, cook the chicken in batches and avoid overcrowding the pan.
