These cheesy, garlicky bites are low-carb and irresistibly delicious. Perfect as a snack, appetizer, or side dish, they’re quick to make and sure to satisfy your cravings.

Ingredients

  • 2 low-carb tortillas of your choice
  • 1/4 cup butter, very soft
  • 1 tablespoon minced garlic
  • 1 tablespoon parsley, chopped
  • 1 cup mozzarella cheese, shredded

Instructions

  • Make the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, and parsley until well combined.
  • Assemble the Cheese Fingers: Spread half of the garlic butter mixture onto one tortilla. Sprinkle 1/2 cup of shredded mozzarella evenly over the tortilla. Place the second tortilla on top. Spread the remaining butter mixture on the top tortilla and sprinkle with the remaining 1/2 cup of mozzarella.
  • Cook: Preheat your air fryer to 400°F (200°C). Place the assembled tortillas in the air fryer and cook for 5 minutes, until the cheese starts to melt and the edges crisp up. Transfer to an oven-safe dish and broil in the oven for 5 minutes to get the top golden and bubbly.
  • Slice and Serve: Remove from the oven and let cool slightly. Slice into strips or wedges and enjoy immediately!
