- 2 pounds ground chicken
- 1 cup parmesan cheese, freshly grated, divided
- 3/4 cup plain breadcrumbs
- 2 large eggs
- 4 cloves garlic, minced
- 1/4 cup milk
- 1/4 cup mayonnaise
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter
- 1/2 cup heavy cream
- 1/2 cup mozzarella cheese, shredded
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9 x 5-inch loaf pan or small baking dish.
- In a large bowl, combine the ground chicken, 1/2 cup parmesan cheese, breadcrumbs, eggs, garlic, milk, mayonnaise, parsley, Italian seasoning, onion powder, salt, and black pepper. Mix gently until just combined.
- Transfer the mixture to the prepared pan or shape it into a loaf in the baking dish. Smooth the top evenly.
- Sprinkle the remaining 1/2 cup parmesan cheese and the mozzarella over the top.
- Bake for 45 to 55 minutes, or until the center reaches 165°F (74°C).
- Let the loaf rest for 5 to 10 minutes after baking.
- Meanwhile, melt the butter in a small saucepan over low heat. Stir in the heavy cream and warm gently until smooth and lightly thickened.
- Spoon the creamy garlic parmesan topping over the loaf, garnish with extra parsley if desired, then slice and serve warm.
Notes
- Do not overmix the chicken mixture or the loaf can become dense.
- Freshly grated parmesan gives the best flavor and melt.
- Let the loaf rest before slicing so it holds together better.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
