  • 1 cup parmesan cheese, freshly grated, divided
  • 3/4 cup plain breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1/4 cup milk
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9 x 5-inch loaf pan or small baking dish.
  2. In a large bowl, combine the ground chicken, 1/2 cup parmesan cheese, breadcrumbs, eggs, garlic, milk, mayonnaise, parsley, Italian seasoning, onion powder, salt, and black pepper. Mix gently until just combined.
  3. Transfer the mixture to the prepared pan or shape it into a loaf in the baking dish. Smooth the top evenly.
  4. Sprinkle the remaining 1/2 cup parmesan cheese and the mozzarella over the top.
  5. Bake for 45 to 55 minutes, or until the center reaches 165°F (74°C).
  6. Let the loaf rest for 5 to 10 minutes after baking.
  7. Meanwhile, melt the butter in a small saucepan over low heat. Stir in the heavy cream and warm gently until smooth and lightly thickened.
  8. Spoon the creamy garlic parmesan topping over the loaf, garnish with extra parsley if desired, then slice and serve warm.

Notes

  • Do not overmix the chicken mixture or the loaf can become dense.
  • Freshly grated parmesan gives the best flavor and melt.
  • Let the loaf rest before slicing so it holds together better.
