  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 6 garlic cloves, minced
  • 3 to 4 tablespoons fresh ginger, minced
  • Kosher salt and black pepper, to taste
  • 1 1/2 cups cooked, shredded chicken
  • 4 cups chicken stock
  • 1 teaspoon freshly grated lime zest
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

For the Cilantro Lime Rice:

  • 2 cups jasmine rice
  • 3 cups water or chicken stock
  • 1 tablespoon unsalted butter
  • Kosher salt and black pepper, to taste
  • 2 limes, zest freshly grated
  • 3 tablespoons fresh lime juice
  • 3/4 cup chopped fresh cilantro

Instructions

  • Prepare the Soup:
    • Heat olive oil in a large stockpot over medium-low heat.
    • Add the diced onions, minced garlic, and fresh ginger. Season with a generous pinch of salt and pepper. Cook, stirring frequently, until the onions soften and become translucent.
    • Stir in the shredded chicken, chicken stock, and lime zest. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for 20-30 minutes while you prepare the rice.
    • Taste the soup and adjust the seasoning with more salt and pepper if needed.
  • Prepare the Cilantro Lime Rice:
    • Rinse the jasmine rice under cold water until the water runs clear.
    • In a medium saucepan, heat the water or chicken stock over medium heat until boiling. Add the rice, butter, and a pinch of salt and pepper.
    • Reduce the heat to a simmer, cover, and cook for 12-15 minutes, or until the liquid is absorbed and the rice is tender.
    • Remove the lid and fluff the rice with a fork. Stir in the lime zest, lime juice, and chopped cilantro.
  • Serve:
    • Scoop the cilantro lime rice into bowls. Ladle the ginger lime chicken soup over the rice.
    • Garnish with fresh cilantro and serve with lime wedges for an extra citrusy kick.

Notes

For a more intense flavor, you can add extra lime juice to the soup or rice just before serving. You can also adjust the ginger to your preferred spice level, making it more or less potent.
