- 4 cups all-purpose flour
- 1 cup whole milk, warm
- 2¼ teaspoons active dry yeast
- ½ cup brown sugar
- 6 tablespoons unsalted butter, softened
- 2 large eggs
- ⅓ cup molasses

- 1 tablespoon ground ginger
- 2 tablespoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 4 ounces cream cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Sugared cranberries (optional, for garnish)
Instructions
- In a mixing bowl, combine warm milk, yeast, and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
- Add eggs, brown sugar, molasses, softened butter, ginger, cinnamon, nutmeg, and salt. Mix well.
- Gradually add flour until a soft dough forms. Knead for 8–10 minutes.
- Cover and let rise in a warm place until doubled, about 1 hour, or refrigerate overnight.
- Roll dough into a large rectangle. Spread with softened butter and sprinkle with brown sugar and cinnamon.
- Roll tightly and cut into 12 even rolls. Place in a greased 9×13 baking dish.
- Cover and let rise again for 45 minutes, or bring to room temp if refrigerated overnight.
- Bake at 350°F for 25–30 minutes until golden brown.
- Whisk cream cheese, powdered sugar, and vanilla until smooth. Spread over warm rolls and top with sugared cranberries if desired.

- Use dark molasses for deeper gingerbread flavor.
