- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/3 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 6 oz cream cheese, softened
- 1/2 cup powdered sugar
- Sprinkle of cinnamon or nutmeg for garnish
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt. Gradually add to the wet ingredients and mix until combined.
- Roll dough into 1-inch balls, coat in sugar if desired, and place on the baking sheet.
- Use your thumb or spoon to create a well in the center of each ball.
- In a small bowl, beat cream cheese, powdered sugar, and a splash of vanilla until smooth. Fill the wells with this mixture.
- Bake for 10–12 minutes, until edges are just set. Cool on a wire rack.
- Dust with cinnamon or nutmeg before serving.
Notes
- Chilling the dough prevents spreading and deepens the flavor.
- Use a piping bag for cleaner filling application.
- Store in an airtight container or freeze for later.
