These Green Tea, Lemon & Ginger Chews are a refreshing and healthy treat that combines the soothing flavors of green tea, zesty ginger, and tangy lemon. Perfect for a natural energy boost or as a homemade snack, these chews are packed with antioxidants and can be sweetened with honey to your taste.

Ingredients

  • 3/4 cup (180 ml) cold water
  • 5 tablespoons unflavored gelatin powder
  • 1/2 cup strongly brewed green tea (use 4 tea bags)
  • 1/3 cup (80 ml) ginger juice
  • 1/4 cup (60 ml) fresh lemon juice or preservative-free bottled lemon juice
  • Optional: honey, to taste

Instructions

  • Pour cold water into a medium saucepan and sprinkle the gelatin powder evenly on top. Let it sit for 5 minutes to bloom.
  • Brew green tea with 4 tea bags, steeping according to package instructions. Remove the bags and ensure you have 1/2 cup of strong tea.
  • Add the brewed green tea, ginger juice, and lemon juice to the bloomed gelatin. Heat on low, stirring gently until the gelatin dissolves completely. Be careful not to let it boil.
  • Taste the mixture and, if desired, sweeten with honey, stirring until it is fully combined.
  • Carefully pour the mixture into silicone molds or a lightly greased baking dish.
  • Refrigerate for 2 hours or until the chews are firm.
  • Once set, remove the chews from the molds or cut them into squares if using a baking dish.
  • Store in an airtight container in the fridge for up to a week.

Notes

  • If you don’t have silicone molds, a lightly greased baking dish works just as well. Just make sure to cut the chews into squares after refrigerating.
  • You can adjust the sweetness of the chews by adding more or less honey depending on your taste.
