Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed salad greens (e.g., romaine, spinach, arugula)
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup sliced almonds (optional)
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill chicken for 6–7 minutes per side, or until fully cooked (internal temperature of 165°F/74°C). Let rest for 5 minutes, then slice.
  3. In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, salt, and pepper to make the dressing.
  4. In a large bowl, combine salad greens, cucumber, cherry tomatoes, red onion, and sliced almonds.
  5. Add grilled chicken slices on top and drizzle with the honey mustard dressing.
  6. Toss gently and top with crumbled feta cheese if desired. Serve immediately.

Notes

  • Marinate the chicken in the dressing for extra flavor.
  • Can be prepared ahead and assembled just before serving.
  • Pairs well with Sauvignon Blanc or iced tea.
