  • 4 Italian sausages (mild or spicy)
  • 4 hoagie rolls or hot dog buns, lightly toasted
  • 1 tablespoon olive oil (for grilling)

For the Topping:

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Grill the Sausages:
    • Preheat a grill or grill pan to medium-high heat.
    • Brush the sausages with olive oil and grill for 10-12 minutes, turning occasionally, until they are cooked through and have a nice char.
    • Remove from the grill and set aside.
  • Prepare the Sautéed Peppers and Onions:
    • Heat olive oil in a large skillet over medium heat.
    • Add the diced peppers, onion, and garlic to the skillet. Sauté for 5-7 minutes, or until the vegetables are softened.
    • Stir in balsamic vinegar, sugar, salt, and pepper. Cook for another 2 minutes, allowing the flavors to meld.
  • Assemble the Sandwiches:
    • Open the toasted hoagie rolls and place a grilled sausage inside each one.
    • Generously top the sausages with the sautéed peppers and onions.
    • Garnish with freshly chopped parsley for a burst of flavor.
