These adorable Grinch Cookies are soft, festive, and fun! Made with a simple vanilla cake mix and tinted Grinch-green, they’re perfect for Christmas gatherings, cookie exchanges, or a cozy movie night watching How the Grinch Stole Christmas. Each cookie is topped with a red candy heart—just like the Grinch’s growing heart!

Ingredients

  • 1 box vanilla cake mix
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • Green gel food coloring
  • Powdered sugar (for rolling)
  • Red heart-shaped candies

 

 

Instructions

  • Preheat the Oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Prepare the Dough: In a large bowl, combine the vanilla cake mix, softened butter, vanilla extract, and eggs. Mix until a soft dough forms. Add a few drops of green gel food coloring and mix until you achieve the desired Grinch-green color.
  • Shape the Cookies: Scoop out tablespoons of dough and roll into balls using your hands. Roll each ball in powdered sugar until well-coated.
  • Bake: Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 8-10 minutes, or until the edges are set and the cookies are slightly puffed.
  • Add the Heart: Remove the cookies from the oven and immediately press a red heart-shaped candy into the center of each cookie. Let the cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Use gel food coloring instead of liquid for a vibrant green without affecting the dough’s consistency.
  • If you don’t have heart-shaped candies, you can pipe a small red heart using royal icing or melted red candy melts.
  • Store cookies in an airtight container for up to 5 days, or freeze for longer storage.
