  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup crushed pineapple, drained
  • 1/3 cup shredded coconut
  • 1/3 cup chopped macadamia nuts or walnuts (optional)

Instructions:

  1. Preheat the Oven
    Preheat your oven to 350°F (175°C).
    Grease and flour a standard 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the Dry Ingredients
    In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. Combine the Wet Ingredients
    In a large mixing bowl, whisk together the sugar, brown sugar, and eggs until smooth.
    Add the vegetable oil, vanilla extract, and mashed bananas, mixing until well combined.
  4. Fold in the Add-Ins
    Stir the crushed pineapple, shredded coconut, and nuts into the wet mixture.
    Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix.
  5. Bake the Bread
    Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
    Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
    Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can use coconut oil instead of vegetable oil for a richer flavor.
  • For a more intense tropical flavor, add a bit more shredded coconut or macadamia nuts.
  • If you prefer a nut-free version, simply omit the nuts.
