- 3 medium ripe bananas, mashed
- 1 ½ cups rolled oats
- ½ cup almond flour
- 2 large eggs
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, mash the bananas. Stir in eggs, maple syrup, and vanilla extract.
- Add rolled oats, almond flour, cinnamon, baking soda, and salt. Mix until just combined.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Optionally, sprinkle extra oats or cinnamon on top.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing into bars.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
- Don’t overbake to keep them moist.
