Ingredients

  • 3 medium ripe bananas, mashed
  • 1 ½ cups rolled oats
  • ½ cup almond flour
  • 2 large eggs
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas. Stir in eggs, maple syrup, and vanilla extract.
  3. Add rolled oats, almond flour, cinnamon, baking soda, and salt. Mix until just combined.
  4. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  5. Optionally, sprinkle extra oats or cinnamon on top.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before slicing into bars.
