2 cups fresh or frozen blueberries
2 tablespoons chia seeds
1–2 tablespoons water (if needed)
1 teaspoon lemon juice
1/2 teaspoon vanilla extract (optional)
Optional: 1–2 teaspoons maple syrup or honey (only if you want a little extra sweetness)
Instructions
Place blueberries in a small saucepan over medium heat. Cook, stirring occasionally, until the blueberries start to release their juices and soften (about 5 minutes). Gently mash the blueberries with a fork or potato masher to your preferred texture.
Stir in the chia seeds, lemon juice, and vanilla extract (if using). If the mixture looks too thick, add 1–2 tablespoons of water.
Reduce heat to low and simmer for another 3–5 minutes, stirring often, until the jam thickens.
Remove from heat and let the jam cool completely. It will continue to thicken as it cools.
Transfer the jam to a clean jar or airtight container. Refrigerate and use within 1–2 weeks, or freeze for longer storage.
Notes
Sweetness: Taste after cooking and add a tiny bit of maple syrup or honey only if needed — often the blueberries are sweet enough!
Texture: For a smoother jam, you can blend the cooked blueberries before adding chia seeds.
