Healthy Tiramisu Loaf

A lighter twist on classic tiramisu made into a soft, layered loaf with coffee infused cake and creamy mascarpone filling.

Ingredients

  • 1 ½ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 3 large eggs
  • ½ cup granulated sugar
  • ¾ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ¾ cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese, softened
  • ¼ cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F and grease a 9 by 5 inch loaf pan.
  2. Mix flour, baking powder, and salt in one bowl.
  3. Whisk eggs and sugar until light, then add yogurt and vanilla.
  4. Fold dry ingredients into wet ingredients until combined.
  5. Pour half the batter into the pan and bake for 15 minutes.
  6. Brush baked layer with brewed coffee.
  7. Mix mascarpone and powdered sugar, spread over layer.
  8. Add remaining batter and bake 30 to 35 minutes.
  9. Cool completely, chill 2 hours, dust with cocoa powder before serving.

Notes

  • Chill fully before slicing for clean layers.
  • Use strong coffee for best flavor.
  • Sift cocoa powder just before serving.
