- 1 ½ cups all purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 3 large eggs
- ½ cup granulated sugar
- ¾ cup plain Greek yogurt
- 1 teaspoon vanilla extract
- ¾ cup strong brewed coffee, cooled
- 1 cup mascarpone cheese, softened
- ¼ cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
Instructions
- Preheat oven to 350°F and grease a 9 by 5 inch loaf pan.
- Mix flour, baking powder, and salt in one bowl.
- Whisk eggs and sugar until light, then add yogurt and vanilla.
- Fold dry ingredients into wet ingredients until combined.
- Pour half the batter into the pan and bake for 15 minutes.
- Brush baked layer with brewed coffee.
- Mix mascarpone and powdered sugar, spread over layer.
- Add remaining batter and bake 30 to 35 minutes.
- Cool completely, chill 2 hours, dust with cocoa powder before serving.

- Chill fully before slicing for clean layers.
- Use strong coffee for best flavor.
- Sift cocoa powder just before serving.
