6 medium russet potatoes
2 tbsp extra virgin olive oil
1–2 tbsp Cajun seasoning
¼ cup creamy ranch dressing (plus extra for dipping)
For the Creamy Cheese Sauce:
2 tbsp butter
2 tbsp flour
⅔ cup milk
2 cups shredded cheddar cheese
Instructions
Prepare the Fries: Wash, scrub, and pat dry potatoes. Peel and slice into thick fries (¾ inch x 3 inches).
Steam the Potatoes: Boil 1 quart of water, season with 3 tbsp salt. Using a basket or colander, steam potatoes over the simmering water for 10–12 minutes until tender but firm.
Coat and Bake: Transfer potatoes to a bowl and drizzle with olive oil, tossing to coat evenly. Arrange in a single layer on a nonstick baking sheet. Bake at 450°F for 10 minutes. Rotate the pan and bake another 5–10 minutes, watching closely to avoid burning.
Make the Cheese Sauce: Melt butter in a saucepan over medium heat. Whisk in flour and milk until smooth. Add cheese and stir until fully melted and creamy.
Assemble: Sprinkle Cajun seasoning over the baked fries and toss gently. Drizzle with ranch dressing and ¼ cup cheese sauce. Serve remaining cheese sauce and ranch on the side for dipping.
Notes
You can adjust the amount of Cajun seasoning depending on how spicy you like it.
For a more indulgent experience, top the fries with additional cheese sauce or even some chopped green onions.
