This Herb Butter Beef Tenderloin Roast is a show-stopping main dish perfect for special occasions. With a flavorful herb butter coating and a perfect roast, it’s a tender, juicy roast beef that everyone will love.

Ingredients

Scale
  • 3 lb beef tenderloin roast
  • ½ cup unsalted butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat Oven:
Preheat your oven to 425°F (220°C).
  • Season the Beef:
Pat the beef tenderloin dry with paper towels and season generously with salt and pepper.
  • Prepare Herb Butter:
In a small bowl, mix together the softened butter, rosemary, thyme, and minced garlic.
  • Coat the Beef:
Coat the beef tenderloin with the herb butter mixture, ensuring it is evenly covered on all sides.
  • Sear the Beef:
Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side.
  • Roast the Beef:
Transfer the seared beef to a roasting pan and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust cooking time for desired doneness.
  • Rest the Beef:
Remove the beef from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute for a juicier roast.
  • Garnish and Serve:
Garnish with freshly chopped parsley and serve immediately.

Notes

  • For medium doneness, aim for an internal temperature of 140°F (60°C).
  • Serve this tenderloin with roasted vegetables, mashed potatoes, or your favorite sides.
