1–2 Roma tomatoes (diced)
½ onion (diced)
4 servings of skim marble cheese (grated or cubed)
Everything bagel seasoning (for topping)
Instructions
Preheat Oven: Set your oven to 350°F (175°C) and lightly grease a baking pan.
Mix Ingredients: In a large bowl, whisk together cottage cheese, eggs, salt, pepper, and garlic powder. Fold in the spinach, tomatoes, and onion.
Pour into Pan: Pour the mixture into the prepared baking pan.
Top the Bake: Sprinkle the grated or cubed marble cheese over the top and add a generous sprinkle of everything bagel seasoning.
Bake: Bake for 30–40 minutes, or until the eggs are set and the bake is firm in the center with a lightly golden top.
