  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • A pinch of salt
  • A few drops of green food coloring (optional, for a vibrant color)

Instructions

  • Prepare the Pistachios: Finely chop the pistachios in a food processor until they are almost a paste but still have some small chunks for texture.
  • Make the Ice Cream Base: In a medium saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat, stirring until the sugar dissolves. Be careful not to let the mixture boil.
  • Flavor the Base: Remove from heat and stir in the pistachios, vanilla extract, almond extract (if using), and salt. For a vibrant green color, add a few drops of green food coloring and mix well.
  • Chill the Mixture: Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • Freeze and Serve: Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 2 hours until firm. Serve scooped into bowls or cones, and garnish with extra chopped pistachios on top.

Notes

  • If you don’t have an ice cream maker, you can freeze the mixture and stir every 30 minutes for the first few hours to prevent ice crystals from forming.
  • You can skip the almond extract if you prefer a more subtle flavor.
  • Adjust the sweetness to your liking by adding more or less sugar.
