  • 1 1/2 to 2 lbs boneless, skinless chicken thighs
  • 1/2 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tablespoon rice wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon cornstarch
  • 2 teaspoons fresh rosemary, chopped (for garnish)

Instructions

  1. Preheat oven to 450°F (232°C). Line an 8×8-inch oven-proof pan with two layers of tin foil.
  2. In a small bowl, whisk together Dijon mustard, maple syrup, rice wine vinegar, salt, and pepper.
  3. Place the chicken thighs in the prepared pan and pour the sauce mixture over them. Turn the chicken to ensure it’s evenly coated.
  4. Bake, uncovered, for 40 minutes, or until the chicken is fully cooked.
  5. Remove from the oven and let the chicken rest for 5 minutes. Transfer to a serving platter, reserving the cooking liquid.
  6. In a small bowl, mix cornstarch with a tablespoon of cold water to create a slurry. Add this mixture to the reserved cooking liquid and whisk over low heat until the sauce thickens, about 1-2 minutes.
  7. Pour the thickened sauce over the chicken and garnish with chopped rosemary before serving.

Notes

  • Ensure the chicken is fully cooked by checking that the internal temperature reaches 165°F (74°C).
  • For a spicier kick, consider adding a pinch of red pepper flakes to the sauce.
  • This dish pairs wonderfully with mashed potatoes, rice, or steamed vegetables.
