Ingredients

Scale

4 medium sweet potatoes, peeled and diced into 1-inch cubes; 3 tablespoons olive oil; 3 tablespoons honey; 1 teaspoon ground cinnamon; 1/2 teaspoon salt; 1/4 teaspoon black pepper; 1/4 teaspoon nutmeg (optional); fresh parsley or thyme, for garnish (optional).

Instructions

  • Preheat the Oven:
Preheat your oven to 425°F (220°C).

  • Prepare the Sweet Potatoes:
In a large bowl, combine the diced sweet potatoes with olive oil, honey, ground cinnamon, salt, black pepper, and nutmeg if using. Toss well to evenly coat.

  • Arrange on a Baking Sheet:
Spread the sweet potatoes in a single layer on a parchment-lined or silicone mat-lined baking sheet. Avoid overcrowding to ensure they roast evenly.

  • Roast:
Roast in the preheated oven for 25–30 minutes, flipping halfway through, until sweet potatoes are tender and edges are golden and caramelized.

  • Garnish and Serve:
Let cool slightly, then garnish with fresh parsley or thyme if desired. Serve warm as a side dish.

Notes

  • For extra crispiness, broil for the last 2–3 minutes.

  • Swap honey with maple syrup for a vegan option (use maple instead of honey and verify oil choice).

  • Great as leftovers—just reheat in a skillet or air fryer for a crisp edge!
