Ingredients
Scale
- 1 pound lean ground beef
- 2 medium sweet potatoes, peeled and cubed
- 2 ripe avocados, diced
- 1 cup full-fat cottage cheese
- 2 tablespoons hot honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper in a bowl.
- Spread the sweet potatoes on the baking sheet and roast for 20–25 minutes until tender and edges are crisp.
- Meanwhile, cook ground beef in a skillet over medium-high heat. Season with smoked paprika, salt, and pepper. Cook for 8–10 minutes until browned.
- Let components cool slightly before assembling to maintain texture.
- In a serving bowl, layer the ground beef, roasted sweet potatoes, diced avocado, and cottage cheese.
- Drizzle hot honey over the top just before serving and enjoy.
Notes
- Let the cottage cheese come to room temperature for the best texture.
- Use lean beef for a healthier option with less grease.
- Hot honey can be adjusted to taste or swapped for regular honey with chili flakes.
- Store components separately for easy meal prep and longer freshness.
