Ingredients

  • 1 pound lean ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 2 ripe avocados, diced
  • 1 cup full-fat cottage cheese
  • 2 tablespoons hot honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper in a bowl.
  3. Spread the sweet potatoes on the baking sheet and roast for 20–25 minutes until tender and edges are crisp.
  4. Meanwhile, cook ground beef in a skillet over medium-high heat. Season with smoked paprika, salt, and pepper. Cook for 8–10 minutes until browned.
  5. Let components cool slightly before assembling to maintain texture.
  6. In a serving bowl, layer the ground beef, roasted sweet potatoes, diced avocado, and cottage cheese.
  7. Drizzle hot honey over the top just before serving and enjoy.
