  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons freshly grated lemon zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Powdered sugar for dusting (optional)
  • Fresh berries for serving (optional)

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • Mix the Wet Ingredients:
In a large mixing bowl, combine the ricotta cheese, limoncello, granulated sugar, eggs, vanilla extract, and lemon zest. Mix until smooth and well combined.
  • Combine the Dry Ingredients:
In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the ricotta mixture, stirring until just combined. Be careful not to overmix.
  • Pour into the Pan:
Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake the Cake:
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Dust with powdered sugar before serving and top with fresh berries if desired.

Notes

  • You can also drizzle a little extra limoncello over the cake after baking for an added burst of flavor.
  • For a richer lemon flavor, you can add more lemon zest or a tablespoon of lemon juice to the batter.
  • This cake pairs wonderfully with a cup of tea or coffee.
