1 pound mild Italian sausage
1 onion, chopped
1 red bell pepper, chopped
1 cup chopped celery
1 cup sliced carrots
3–4 cloves garlic, minced
1 teaspoon salt
¼ teaspoon pepper
2 teaspoons Italian seasoning
1 (15-ounce) can Italian tomatoes, or diced
32 ounces chicken broth
1 cup water
1 cup dry ditalini, or macaroni noodles
1–2 cups spinach, chopped
Instructions
Cook Sausage and Vegetables: In a large pot, cook the sausage over medium heat. Drain the fat and add the chopped onion, celery, red bell pepper, and carrots. Cook for 3 minutes.
Add Seasonings: Stir in the garlic, Italian seasoning, salt, and pepper. Cook for another minute until fragrant.
Simmer the Soup: Stir in the broth, tomatoes, and water. Bring to a simmer.
Cook the Pasta: Turn the heat to medium-high and add the pasta. Cover and stir occasionally. Cook for 10 minutes, or until the pasta is tender.
Add Spinach: Stir in the chopped spinach and season to taste.
Serve: Ladle the soup into bowls and top with Parmesan and fresh herbs if desired.
Notes
You can use spicy Italian sausage if you prefer more heat.
If you want a thicker soup, you can mash some of the vegetables with a spoon.
