- 2 1/4 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup raspberry or strawberry jam
- 2 tablespoons powdered sugar, optional for dusting
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream softened butter and granulated sugar until light and fluffy. Add egg and vanilla extract, mixing until smooth.
- Gradually mix in flour and salt until a soft dough forms.
- Roll dough on a lightly floured surface to about 1/4 inch thickness.
- Cut out round cookies. Use a small heart cutter to remove the center from half of the cookies.
- Place solid rounds on the prepared baking sheet and spoon a small amount of jam into the center of each.
- Place the cutout cookies on top, aligning the edges carefully.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Allow cookies to cool completely before dusting with powdered sugar if desired.
Notes
- Chill the dough for 30 minutes if it feels too soft before rolling.
- Use thick jam to prevent spreading during baking.
- Do not overfill the centers to avoid bubbling over.
- Store in an airtight container for up to 4 days.
