Japanese Clear Soup

Ingredients

  • 2 teaspoons dashi powder
  • 4 cups water
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/2 cup mushrooms, thinly sliced (shiitake or button)
  • 2 tablespoons green onions, thinly sliced

Instructions

  1. Place your saucepan over medium heat.
  2. Add water and dashi powder to the pot. Stir to dissolve completely.
  3. Stir in soy sauce and salt.
  4. Add sliced mushrooms and simmer for 5 to 7 minutes.
  5. Turn off heat and stir in the green onions.
  6. Ladle the soup into bowls and serve hot.

  • Don’t boil the broth to keep it clear.
