  • 1 tsp lemon juice
  • 2 celery stalks, finely chopped
  • 1 small red onion, finely diced
  • Salt and pepper to taste
  • 2 slices of sourdough or multigrain bread
  • Handful of mixed greens or arugula
  • 45 cucumber slices
  • 23 tomato slices
  • Butter or olive oil for toasting bread

Instructions

  1. In a bowl, combine tuna, mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, chopped celery, and red onion. Mix well. Season with salt and pepper to taste.
  2. Lightly butter or brush olive oil on the bread slices and toast them until golden brown.
  3. Spread the tuna mixture evenly over one slice of toasted bread.

  5. Top with the second slice of toasted bread.
