Instructions
- Heat a non-stick or cast-iron skillet over medium heat and add a light layer of olive oil.
- In a large bowl, combine ground chicken, corn, breadcrumbs, egg, onion, garlic, parsley, salt, pepper, and paprika. Mix just until combined.
- Ensure the skillet is hot and the oil is shimmering.
- With damp hands, shape mixture into ½-inch thick patties and place on a plate.
- Place patties in the skillet and cook for 4–5 minutes per side until golden brown and cooked through.
- Transfer to a paper towel-lined plate and let rest for 2–3 minutes before serving.
