Ingredients

Scale

Meat Base

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp paprika

Cauliflower “Tots” Topping

  • 2 cups riced fresh cauliflower
  • 1 cup shredded cheddar cheese
  • 2 tbsp almond flour
  • Salt and pepper, to taste

Creamy Binder

  • 4 oz cream cheese or ½ cup sour cream

Additional Toppings and Garnishes

  • ½ cup extra shredded cheese (cheddar or your choice)
  • Chopped green onions or parsley (optional)

Instructions

  1. Prepare the Cauliflower “Tots”: Steam or microwave 2 cups of riced fresh cauliflower until tender. In a bowl, mix the cauliflower with 1 cup shredded cheddar cheese, 2 tablespoons almond flour, and seasoning (salt and pepper). Shape this mixture into small tot-like shapes and bake until golden and crispy to form the low-carb topping.
  2. Cook the Meat Mixture: In a skillet, sauté diced onion and minced garlic until fragrant. Add 1 lb ground beef or turkey and cook until browned. Season with salt, pepper, and paprika. Once cooked through, stir in 4 oz cream cheese or ½ cup sour cream to add creaminess to the mixture.
  3. Assemble the Casserole: Grease a baking dish and spread the prepared meat mixture evenly across the bottom. Layer the cauliflower tots on top, pressing lightly to cover the meat. Sprinkle an additional ½ cup shredded cheese over the tots to create a melty crust.
  4. Bake to Perfection: Preheat oven to 375°F (190°C). Bake the assembled casserole for 20-25 minutes until the topping is crisp and the cheese is melted and golden brown.
  5. Garnish and Serve: Allow the casserole to cool slightly before garnishing with chopped green onions or fresh parsley. Serve warm for a comforting low-carb meal.

Notes

  • Use fresh cauliflower for a better topping texture rather than frozen.
  • Drain any excess fat after cooking ground meat to prevent greasiness.
  • Don’t skip cream cheese as it adds essential creaminess and balances savory flavors.
  • Assemble the casserole ahead of time and bake when ready to save time.
  • Monitor baking time as oven temperatures can vary to avoid over-browning.
