Lamb Kofte is a flavorful and aromatic dish made from ground lamb mixed with spices, herbs, and lemon juice. It’s shaped into ovals, baked, and then charred under the broiler for a crispy exterior. This dish is perfect when served with couscous, tabbouleh, and a refreshing yogurt or tzatziki sauce.

  • 2 pounds ground lamb
  • 1/2 medium onion, grated or finely minced (drain excess moisture)
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs (or almond meal or gluten-free breadcrumbs)
  • 1 teaspoon sea salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander
  • 1/2 teaspoon Aleppo pepper
  • 4 tablespoons very finely minced fresh parsley
  • 2 tablespoons very finely minced fresh mint
  • 1 teaspoon baking soda
  • 2 teaspoons lemon juice
  • 2 tablespoons olive oil

Instructions

  • Combine Ingredients: In a large mixing bowl, combine ground lamb, grated onion, beaten egg, breadcrumbs, spices, herbs, lemon juice, and baking soda. Mix until well incorporated. Cover the mixture and chill for at least an hour, or overnight for best flavor.
  • Preheat Oven: Preheat your oven to 450°F (230°C). Line a rimmed baking sheet with foil.
  • Form Kofte: Use a medium cookie scoop to portion out about 2 tablespoons of the kofte mixture per piece. Shape the mixture into oval shapes and slide them onto skewers.
  • Bake: Arrange the skewers on the prepared baking sheet. Brush the kofte with olive oil. Bake in the oven for about 10 minutes. Then, place the skewers under the broiler for 1-2 minutes to char the exterior. Ensure the kofte are fully cooked by checking that the internal temperature reaches 160°F.
  • Serve: Serve the lamb kofte immediately over couscous with tabbouleh and a side of minted yogurt sauce or tzatziki sauce.

Notes
