These pecan pie bars offer the perfect blend of buttery, crumbly crust and sweet, nutty filling. Easy to make and irresistible for any occasion, these bars are a delicious alternative to traditional pecan pie!

1 package (16 oz) refrigerated pie crusts (2 crusts)
• 1 cup light corn syrup
• 1 cup brown sugar, packed
• ½ cup unsalted butter, melted
• 3 large eggs
• 1 tsp vanilla extract
• 1 ½ cups pecan halves
• ¼ tsp salt

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  • Prepare Pie Crust:
    • Roll out the refrigerated pie crusts and fit them into the bottom of the greased baking pan, pressing down gently to cover the entire bottom.
  • Make Filling:
    • In a large mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth.
    • Stir in the pecan halves until evenly coated.
  • Pour Filling:
    • Pour the pecan filling over the pie crust in the baking pan, spreading it evenly.
  • Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.
    • Allow to cool completely before cutting into bars.

Notes

  • For a crispier crust, pre-bake the pie crust for 5-7 minutes before adding the filling.
  • If you prefer a sweeter filling, add an extra tablespoon of brown sugar.
  • These bars store well in an airtight container for up to 3 days.
